Ingredients

  • 6 free range eggs
  • 1 brown onion halved
  • ½ packet of dry plain crackers
  • 5 cups grated cheddar cheese
  • 475 gram can of tuna in olive oil – drain but don’t worry if there’s some oil left, it adds to the moistness and yumminess of the slice (yes, these are all technical terms)
  • 1 cup frozen peas – thawed and drained
  • 1 cup frozen corn – thawed and drained
  • 1 medium zucchini grated; fluid squeezed out
  • ½ cup of milk
  • 2 tomatoes, cut horizontally into slices
  • Salt and pepper as desired

Instructions

  1. Preheat the oven to 180 degrees
  2. In a food processor blitz the crackers, onion, and cheese – you’re aiming for a crumbly mixture (that FYI is delicious if you do taste it!)
  3. Transfer the mixture to a large bowl and combine with eggs, milk, tuna and all the vegetables. You are literally throwing everything in!
  4. Stir thoroughly to combine
  5. Pour the ingredients into a greased or lined oven tray
  6. Press the tomato slices on top of the slice – you want them just sitting on top and slightly pushed in
  7. Bake for 30 to 35 minutes until golden brown
  8. Allow to cool before removing from pan and slicing so it can firm up!

This is great for kids of all ages and wonderful for kid and adult lunch boxes. This is a staple in our house!
